The Plaisentif, which is also called "violet cheese", is a particularly fragrant toma precisely because it is produced in the month of June when the pastures are still full of beautiful purple flowers. The scents are those of butter, wet chestnut leaves, undergrowth, clean stables. The structure appears compact, deformable and malleable in the mouth. The aromas released are of butter, chestnuts and walnuts. The finish releases a mellow and almondy sensation of medium intensity and persistence in the mouth combined with hints of the stable, the product is interesting and quite balanced.
The maturation of Plaisentif lasts 80 days and can only be marketed on the third Sunday of September, on the occasion of the "Poggio Oddone" festival in Perosa Argentina.
Plaisentif can be recognized by the letter "P" and the logo, featuring a stylized violet, which is branded on one of the faces of the wheel.
