From the ancient tradition of preserving cheese in ashes, this cheese was born with a tender and unctuous texture and a thin rind with a characteristic dark colour, due to washing with charcoal during the maturing process. In the mouth, the sweet sensation of cooked milk blends with the pleasant vegetal and bitter note of charcoal.
