Prodotto dalla consistenza delicata formato da grasso di ottima qualità attraversato da venature magre di muscolo che conferiscono dolcezza e sapidità al tempo stesso.
Alimento indispensabile per cucinare la Vera Amatriciana …. Ottimo anche sottilmente affettato in accompagnamento alla polenta
