EMMENTALER FROM KALTBACH'S CAVE - AGED MORE THAN 30 MONTHS

Emmentaler Kaltbach took its name from Emmental' Valley, where Emme's river flows. Its long seasoning guarantes to this raw milk cheese the total absence of lactosium, and a peculiar flavour of walnut. The Natural Kaltbach's Cave, shaped by water and ice during millions of years, gave to this cheese a unique way of seasoning, by the fixed humidity and temperature naturally maintained in this caves.
