EMMENTALER FROM KALTBACH'S CAVE - AGED MORE THAN 30 MONTHS

Swiss Emmentaler takes its name from the Emmental, the valley in the canton of Bern where the Emme river flows.

Its prolonged maturation guarantees this raw milk cheese the absence of lactose and a flavor tending towards a hazelnut flavour. Kaltbach's Emmentaler hides rare droplets inside its famous holes, nicknamed "Tears of Joy": a concentrate of unique flavour. 

The Kaltbach sandstone caves, shaped by water and ice over millions of years, allow this cheese to mature in a unique way, given the naturally constant temperature and humidity.
