Emmentaler Kaltbach took its name from Emmental' Valley, where Emme's river flows.
Its long seasoning guarantes to this raw milk cheese the total absence of lactosium, and a peculiar flavour of walnut.
The Natural Kaltbach's Cave, shaped by water and ice during millions of years, gave to this cheese a unique way of seasoning, by the fixed humidity and temperature naturally maintained in this caves.
