Apulian artichokes, carefully selected, calibrated and processed exclusively fresh in the best harvest time between March and April.
The preparation requires them to be oxidized in the air and then marinated for 24 hours in oil, vinegar, chilli pepper and spices as in the best home tradition, scrupulously following the typical recipe used in central Italy.
