Comacchio's fish specialty is eel, and the local tradition's preservation method is marinating in vinegar. The only Slow Food Presidium Comacchio eels are produced in the Manifattura dei Marinati: certified wild eels, cooked manually according to an ancient specification of which there are written traces since 1700.
