Cevrin is produced with mixed milk from CHAMOIS GOAT and preferably purebred cow BARA. The cow's milk from the evening milking is combined with the goat's milk from the morning milking.
Cevrin ages at least three months on the mountain pastures of Coazze and requires demanding maintenance: the wheels must be turned and cleaned daily. During maturation the cheese is washed in brine.
They have a round shape with a wrinkled and moist orange-red rind, with apparent gray mould. The paste is quite hard and crumbly with an ivory or straw color on the outside and white on the inside.

Seasoned Cevrin has very intense and persistent aromas, ranging from animal fleece to dry wood and lawn clippings. In the mouth it is at the right point when it begins to melt and reveals notes of hazelnut, butter and even some spicy sensations.
